Ingredients
- 6 cups arugula (or another salad green)
- 2 cups blueberries and/or blackberries
- ½ cup WOODSTOCK Pumpkin Seeds
- ½ cup crumbled feta cheese
For vinaigrette:
- ⅓ cup olive oil
- 1 tablespoon WOODSTOCK Dijon Mustard
- 2 tablespoons white wine vinegar
- ¾ teaspoon salt
- ½ teaspoon black pepper
Directions
- Whisk together all ingredients for vinaigrette.
- Assemble salad ingredients in a large bowl and toss in vinaigrette before serving.
