Ingredients
Topping:
- 1 ½ cup WOODSTOCK Organic Traditional Rolled Oats
- ⅔ cup WOODSTOCK Organic Chopped Pecans
- ⅓ cup maple syrup
- ¼ cup melted coconut oil
- ¼ cup WOODSTOCK Organic Brown Sugar
- ¼ cup all purpose flour
- 2 teaspoons vanilla extract
- 1 ½ teaspoons cinnamon
- ½ teaspoon salt
Filling:
- 6 cups WOODSTOCK Frozen Organic Dark Sweet Cherries
- ¼ cup maple syrup
- ¼ cup WOODSTOCK Organic Brown Sugar
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
Directions
- Preheat oven to 350˚F.
- Add all topping ingredients to a large mixing bowl and stir well until combined.
- Add all the filling ingredients to a separate large bowl and stir until fruit is well coated.
- Transfer the filling to a 9-inch pie tin or cast-iron skillet. Cover filling with crisp topping in an even layer.
- Bake for 40-45 minutes, until topping is golden brown and crispy.
